I've been doing a great deal of testing with stealing, and have really only stumbled upon two issues. The highest level stealing npc(the "Thief") is also among the lowest gold income. While they drop slightly higher gold per snoop, they also have significantly less items. This causes stealing to start gaining far slower, and the income from stealing from the highest npc to be much less than from lower skill levels. Perhaps adding logical items, such as lockpicks, daggers and bows to their loot table would correct this issue.
Secondly, would it be possible to have items such as bones, blood, bone armors etc removed from the loot table, due to them not being able to be sold to vendors. All having them in the loot table does is cause extra items on the server(from people tossing them down) and cause backpacks to fill very quickly. Perhaps change these items to other sellable items?

Agree with the number of items on thief vendor, but gold is ok I'd say, considering a crafter gets about 10 gold worth per loop of mining

The gold values are in a good place, if the amount of items is increased, since that alone will increase the income.

Don't think there is any issue regarding gold. Remember, you can always sell everything inside your backpack for more gold. I usually make 20k+ per night - not that bad i'd say.
Regarding the types of loot you mentioned (bones, blood etc.) I see your point - but on the other hand, if you don't want these items you can just set your macro in a way that it doesn't steal them = problem solved.
However, one thing that deeply annoys me is that stolen items do not stack automatically, even though there are macros for it, it would definitely be rather simpler if they would. Either way, not a big issue.
Another thing is that there is a huge leap from Mage/Alchemist/Scribe @ 100 to Thief at 130. There could be a 115 (if there is, please let me know). Yet again, not a big issue.
All in all, thiefs are fine. They can even HEAL themselves :0

I made 70k tonight. I think my thief is a better source of income than my ranger by now o.o It is also a better source of blank scrolls than my crafter.
There is the priest right beside the mages, with 120 difficulty.

I don't see why training these two particular skills should be made super convinient... They are already a way to make tons of gold which most other skills are not, rather the opposit.
